"Roze Vinul Cavalerului has the taste and the smell of its color!” This was the overwhelmed reaction of Marize and Alain Demezon, famous oenologists from the south of France, when they tasted this wine for the first time.
In Corsica, the island where a part of Count’s de POIX family comes from, summers are very hot and dry, so only a dry rosé, a fresh and unsophisticated wine, may soothe the perpetual sensation of thirst. It is appropriate as an aperitif, but it may as well be served with salads, fish, Chinese menus, barbecues and fresh, light cheese products.
The "manufacturing secret" consists of the experience and the "flair" of the oenologist who chooses the best moment to separate the must from the red grapes, and after that the wine-making goes along just like for the white wines (fermentation at maximum 18°C) and it may last up to 6 weeks. This also explains why rosé wine contains a part of the tannins of a red wine, combined with the fresh and delicate flavor of a white wine.
