This Cuvée, exclusively created from the Fetească Neagră variety, is an homage to Count Guy de POIX, founder of SERVE. Guy has dedicated himself to the redescovery of this specifically Romanian variety ever since November 1994, when it was first presented to him by Aurel ROTĂRESCU, young oenologist, who became his apprentice soon after.

2015 was defined by a late spring, followed by drought and excessive heat in July and August, alternated wit important ranfall, which allowed obtaining corpulent red wines with typical aromas and a very good evolution potential.

The grapes were manually harvested in the first week of the month of October, from the best parcels of feteasca neagra planted in 2003. The vinification process was made in concrete containers, punching down the cap manually and in small truncated cone shaped containers with pneumatic punch down; the alcoholic fermentation lasted about 16 days; the secondary malolactic fermentation was made in 225 litres barrels of French and Romanian wood of 2 and 3 years. After a maturation of 8 to 12 months in the barrels, the most valuable wines were selected to take part in Cuvee Guy de POIX 2015, the fourth of this series. The initial blending was made barrel by barrel, in small lots, then looked after a little more, leading to the final blending. The conditioning and bottling were made with a very light filtration, not to disturb this great wine.

Being a strong and highly expressive wine, we recommend you to pair Cuvee Guy de POIX 2015 with food of its level: red meat, game meat, spicy sauces, matured cheeses; it can successfully accompany a chocoloate dessert.

Kept in optimal conditions of temperature, light and humidity, this wine has an aging potential of at least 12 years.
